Truly unheated- MOST OTHERS ARE HEATED. If coconut oil tastes and smells like coconut it is probably heated.
Heating caramelizes the sugars which makes it smell attractive but much of it's goodness is lost. Keep away from water as the smallest amount will make it go bad.
