They cook for approximately 30 minutes (tender with a slight bite), or until desired texture. Earthy and mild in flavor, green lentils are also tender in texture. Once cooked, they can be used as an alternative to meat in recipes; they can also be used as an addition to salads and soups. They blend or mash easily to add texture, thickness, and depth to recipes as well.
